It is a great honor for us to now also be able to offer you the wines of Ca ’del Baio, because this winery of the Grasso family is one of the absolute highlights from Piemonte. This family business has 25 ha of vineyards, most of which are planted with Nebbiolo. In addition to their acclaimed Barbaresco wines, they have a very nice range of the most typical wines from the region such as Barbera d 'Alba, Langhe Chardonnay & amp; Dolcetto d'Alba.
Grape: 100% Nebbiolo from one of the top cru's of Barbaresco "Asili".
Winemaking: After a rigorous selection of the very best grapes, the juice and skins are left to macerate for a long time. The wine is then vinified in stainless steel barrels under strict temperature control. The Asili is a powerful Cru so it is briefly refined on barriques (6 months), followed by refinement in large barrels.
Color: intense ruby red color, which tends to turn garnet red with aging.
Nose and taste: A very complex nose with mainly forest fruits, cherries complemented by fine aromas of vanilla, spices and rose petals. A very balanced wine with many noble tannins and fine acidity.
Serve with: Excellent for all kinds of game dishes and dishes with all kinds of mushrooms and / or truffles.
