It is a great honor for us to now also be able to offer you the wines of Ca ’del Baio, because this winery of the Grasso family is one of the absolute highlights from Piemonte. This family business has 25 ha of vineyards, most of which are planted with Nebbiolo. In addition to their acclaimed Barbaresco wines, they have a very nice range of the most typical wines from the region such as Barbera d 'Alba, Langhe Chardonnay & amp; Dolcetto d'Alba.
Grape: 100% Nebbiolo from young vines
Vinification: Fermentation in stainless steel tanks after a very short maceration of the skins and juice, all under strict t ° control. After the alcoholic fermentation, the wine is transferred to other stainless steel tanks and rests there for a short while before bottling.
Color: ruby red wine with purple hues
Nose and taste: On the nose it is playful and elegant with the typical floral and fruity aromas of the nebbiolo. On the palate, it is surprising with a nice balance between the fresh acidity and well-presented tannins. Goes well with fresh cold cuts, lightly aged cheeses and Italian pasta with ragù, but also with more simple red meat dishes such as burgers or beef carpaccio.
