IDENTITY: Palpite is what is in the soul of the winemaker, expressing a balance between the grapes, the "Terroir" and the intuition of the man. In each vintage, Palpite is produced by selecting the best vineyard blocks and the best barrels.
ALCOHOL: 15.0%.
DENOMINATION: Vinho Regional Alentejano - Reserve
VITICULTURE: All our grapes come from the highest quality vineyards of the Alentejo region in southern Portugal. Farming is sustainable, production is controlled and quality is improved by removing secondary branches and pruning bunches. The vines are grown on very poor soils of schist or granite origin, naturally giving rise to very concentrated grapes. The aromatic profile is further enhanced by cultural practices such as defoliation, topping and weeding of green bunches.
VINIFICATION AND AGING: The grapes are gently crushed and moved by gravity into stainless steel tanks whose temperature is regulated for fermentation at 27 ° C with two pumping over per day. Fermentation is spontaneous. "Cuvai - son" of 21 days.
