Harvest
A mild and warm winter. We welcomed the holiday of Trifon Zarezan with winter sunshine in Sakar. On February 20th, the first vines of Rubin and Cabernet Franc wept, but the long, rainy, and cold spring delayed their blooming and fertilization by about 2 weeks. We entered the summer with a good moisture reserve in the vines. In July and August, there was a period of extremely high temperatures, typical for Southern Sakar. Nevertheless, we note a delay in the ripening of the grapes during this harvest by about a week to 10 days. The planned start of the grape harvest on September 4th was postponed due to torrential rain. We officially started on September 7th, exactly 10 days later than the previous harvest.
The vines
Along the gentle hills of the Sakar Mountain, not far from Harmanli, at an altitude of 130 meters, on cinnamon and gray forest soils, we cultivate our Cabernet Sauvignon, Cabernet Franc, Syrah, Chardonnay, Mavrud, and Rubin grapes.
Technology
The delayed development of the grapes in 2023 required us to reduce the yield of Mavrud. The grapes were harvested on September 24th with a sugar content of 21%. The wine has undergone the most important processes: alcoholic fermentation, in which contact with the skins is 4 days to reduce the extraction of tannin from the seeds and to preserve a more elegant taste, and malolactic fermentation. It was settled at low temperature and racked several times. Bottled without filtration on October 26th, 2023. There may be some sediment at the bottom of the bottle.
