Cantina Tollo is one of the leading wine companies in Italy. It is a large cooperative, but they operate as a family business. They strive for the highest quality, both for their day-to-day wines and for their premium wines. This earned them the title of best working wine company in Europe (2014).
Grape: Trebbiano d'Abruzzo with a small addition of Chardonnay.
Winemaking: Cryomaceration : at very low temperature, the must is left to rest briefly on the skins so that the maximum of aromas and power are extracted without triggering fermentation. Then everything is filtered and fermented under strict temperature control. Low yields and a short passage on wood give this wine more expressiveness.
Color: Beautiful straw yellow color.
Nose and taste: An elegant nose, with lots of flowers, yellow apples and ripe exotic fruit. It is a full-bodied tasty wine with a surprisingly good structure and a nice balance.
Serve with: Just like that, but also with all kinds of fish preparations. Also worth trying with risotto alla Milanese (with saffron) and egg dishes with ham or bacon.
